Bacon & Pea Cheesy Risotto:  We love risotto in our family but we usually have the same one all the time, so when I saw this in the Good To Know recipe magazine I thought we should give this a try.

I really need to get better at taking food photos – with a photographer hubby you would think I would be, but granted when I make dinner it gets devoured immediately so I had to quickly snap a picture.

Ingredients
  1. 250g Arborio Risotto rice
  2. 200g Bacon Lardons
  3. 200g Frozen peas
  4. 45g Parmesan cheese
  5. 4 x Chicken stock cubes
Instructions
  1. Mix up the chicken stock - I don't' know the exact amount but i fill a small pan full of boiling water with the stock cubes in.
  2. Melt a little bit of butter in a large pan and then add the risotto rice
  3. Add the stock small amount at a a time until the rice has soaked it up and is soft and cooked.
  4. In a small frying pan, fry the lardons for about 5 mins until golden, and cook the peas in the microwave.
  5. Once rice is cooked add the Parmesan cheese and stir well.
  6. Then add the bacon and peas give it another stir to mix well.
  7. Serve
Notes
  1. This recipe was adapted from the Good to Know recipe magazine, they sprinkle the cheese on top and use pre-packet rice whereas we like to mix the cheese well into the mixture.

Now that Jack has started school I thought it was best to meal plan (again!) I have not been very successful at sticking to meal planning, and I really don’t understand why as it something that is so simple to do!! ugh!

Any way for this week menu we will be looking forward to: (subject to change of days)

Monday:  Pasta Bolognese

Tuesday: Homemade Chicken Fried Rice

Wednesday: Homemade Fish Pie

Thursday: Pasta bake

Friday: nuggets or fish fingers with waffles

This used to be Lee’s signature dish, but now I am the one who cooks it all the time icon smile [Recipe] Thai Green Curry It is not your usual Thai Green Curry as it doesn’t have half the things it that it should, so this is our take on it and it is mighty fine if you ask me icon smile [Recipe] Thai Green Curry

Thai Green Chicken Curry

This is our take on a Thai Green Curry - Lee has a limited scope when it comes to veggies and he doesn't even like the green beans, they only get added because I like them!

Ingredients
  1. 250g Diced Chicken
  2. 1 Jar Thai Green Paste
  3. Baby Sweetcorn
  4. Mange Toute
  5. 1 Lime
  6. 1 tin Coconut milk
Instructions
  1. Pan fry the chicken until no longer pink
  2. Add the jar of Green Paste - lower the heat as it will jap! Make sure all the chicken is covered.
  3. Next add the tin of coconut milk - leave a little in the tin if you want to add it to the rice and make it sticky.
  4. Add the baby sweetcorn - whole or chopped (we prefer the sweetcorn chopped into pieces) and the mange toute.
  5. Then add the juice of half a lime or the full lime according to taste.
  6. Leave to simmer and prepare the rice - remember to add the left over coconut milk if you want.

[Recipe] Spiced Carrot & Red Lenti Soup

Tried this recipe out as I had bought way to many carrots and I didn’t want them to go to waste (something we really need work on is our food waste, but that is another story!)

Spiced Carrot & Red Lenti Soup

Ingredients
  1. 2 tsp cumin seeds
  2. pinch chilli flakes
  3. 2 tbs olive oil
  4. 600g carrots, washed and coarsely grated (no need to peel!)
  5. 140g split red lentils
  6. 1L hot vegetable stock
  7. 125ml milk
  8. plain yoghurt and naan bread to serve
Instructions
  1. 1. Heat a large saucepan and dry-fry the cumin seeds and chilli flakes for 1 min, or until they start to jump around the pan and release their aromas. Scoop out about half of the seeds with a spoon and set aside.
  2. 2. Add the oil, carrot, lentils, stock and milk to the pan and bring to the boil. Simmer for 15 mins until the lentils have swollen and softened.
  3. 3. Whizz the soup with a stick blender or in a food processor until smooth (or leave it chunky if you prefer).
  4. 4. Season to taste and finish with a dollop of yogurt and a sprinkling of the reserved toasted spices. Serve with warmed naan breads.
Notes
  1. I tend to miss out the cumin seeds mainly because I didn't have them the first time I made this, and so have not bothered to buy them - I add and extra pinch of Lazy Chili instead

[Recipe] Homemade Mac & Cheese

A good old staple food that is actually really easy to make – I had my doubts when I first started making my own mac n cheese that it would be a faff and take ages. But was I wrong!

Ingredients
  1. 250g Macaroni
  2. 40g butter
  3. 40g plain flour
  4. 1 pint milk
  5. 250g grated cheddar cheese
Instructions
  1. 1. Cook the macaroni as per instruction, drain then set aside.
  2. 2. In a lan larger than that used for the pasta, melt the butter, then add the flour and stir to form a roux
  3. 3. Gradually whisk in milk a little a time and cook for 10/15 min until thickened and smooth sauce.
  4. 4. Remove from heat and add cheese, stir well until cheese is well combined and melted.
  5. 5. Add the macaroni to the sauce and stir well.
  6. 6. Transfer to a deep dish and grill with some cheese on top until brown and bubbling.
Tip
  1. sometimes I add sliced tomatoes on top before covering with cheese and putting under the grill.

[Recipe] Easy Easter biscuits

Today we made Easter biscuits! despite it being a nice day out I thought we would do some baking since we are going over to my mum tomorrow and on Sunday. I am not one to cook or bake and this recipe was unbelievably easy to do.

Jack was my little helper and he enjoyed using writing icing to decorate them. There were more than what is shown on the plate, but a few bunnies lost their ears or worse their head so we just had to eat those….. right?

Ingredients
  1. 170g butter
  2. 170g Plain flour
  3. 55g Corn flour
  4. 55g Icing sugar
Instructions
  1. Preheat oven to 190c/375f/gas mark 5
  2. Mix all the ingredients into a soft dough with your hands.
  3. Place dough on a large clean surface sprinkled with some plain flour
  4. Roll out to about 1inch thick.
  5. User shaped cutter or round cutter to cut out dough.
  6. Place on a baking tray and put in the oven for 10-12 min (remove from oven firm on top but still pale)
  7. Allow to cool on a wire rack before decorating

We were visiting out good friends Al and Amy on Sunday, and Amy introduced us to Fifteens.
These are super easy to make, so easy in fact that Jack helped me make some today icon smile [Recipe] Fifteens

Ingredients
  1. 15 marshmallows halved
  2. 15 glace cherries halved
  3. 15 digestive biscuits crushed
  4. 150ml condensed milk
Instructions
  1. cut marshmallows in half and toss in a large bowl with the cherries and biscuits.
  2. gradually stir in the condensed milk until it becomes a soft, moist dough.
  3. add a little more milk if it too dry
  4. On a clean surface use your hands to make the dough into a sausage shape
  5. Wrap twice in clingfilm and put in the fridge for 2-3 hours
Notes
  1. You can chose to roll the mixture in coconut whilst shaping it, but I chose not to on this occassion.

A new beginning…

It’s a new month, a new slate for the blog and a whole new agenda.

I got this blog way back in 2011 to document my life as a mother, and so far all I have done is neglected the poor thing. At the time I only had Jack and I was still going through my dark post natal depression stage, now I am ok – in a fashion – and now have 3 kids!

I am hoping to make a go with this blog again and keep it family and home orientated, covering parenting, recipes, home life etc.

So to start here are my blogging goals for September

§ get my categories all sorted out
§ fix my featured images to show new logo
§ get my blog planner printed and start using it.
